2Steaming, boiling, rinsing：Place the cleaned bamboo shoots into a continuous pot wooden steamer with a circular cushion, then add water and boil over high heat for 2-3 hours. The standard is for the bamboo shoot flesh to turn from white to jade white and the bamboo shoot body to become soft. Iron drills can be inserted into the bamboo shoot internodes for inspection. Be careful to change the water after cooking 2-3 pots, otherwise the dried bamboo shoots are prone to discoloration, which will reduce their quality and value; After the cooked bamboo shoots are taken out of the pot, they are placed on top of a flowing wooden bucket and rinsed with cold water. The bamboo shoots are then air dried until the surface moisture evaporates.

3Squeezing：Place the washed bamboo shoots in the press in a layered, interlaced and flat manner, gradually pressurize them, and after 1-2 hours, loosen them and then press them with heavy weights until the squeezed water has foam and a slight red color.

4Drying：Place the steamed and pressed bamboo shoots evenly on a stainless steel tray, push them into the drying room, and enter the drying period for 48 hours until the bamboo shoots turn golden yellow.
